I generally regard vegetables as rabbit food, but I make an exception when it comes to this particular salad.
Here are the ingredients...
1 clove garlic 1 hefty teaspoon of Dijon mustard 1 lemon (juiced) 2 tablespoons olive oil salt and pepper to taste
that's the dressing, then the salad is a strict "whatever I have in the fridge" kind of a thing, but for example
1 head Romaine lettuce Baby spinach Shredded carrot 1 large Tomato (or 8-10 baby ones) Celery Broccoli 1/3 cucumber Capers
Toss it all in a large bowl (on top of the salad dressing), toss well with the dressing, then toss it (or place it delicately, depending on your preference) onto plates.
